How to make the traditional Labane
Classic Labneh-Goat’s milk
Place the colander over a bowl. Line with the muslin cloth.
1-Add the yoghurt mixture
2-tie the muslin cloth.
the whey (liquid) will collect in the bowl. Place in the fridge overnight or 24 hours.
3-Do not discard the whey. You can use it in baking, soup,etc. It is full of minerals.
4-Transfer the cheese to a serving dish, cover and keep in fridge till ready to serve. Labneh becomes more sour as it ages. It should keep well covered and chilled up to 2 weeks. If made into balls and preserved in olive oil, then it will keep a couple of months.

Ginger and Orange Blossom Honey Labneh
- 500g goat’s milk yoghurt
- 1/2 teaspoon of salt (this helps to reduce the acidity and improves flavor)
- 1 bowl
- 1 colander

- 1 tablespoon finely chopped red chili (about 1 chili)
- 1 garlic clove, pounded
- 1 tablespoon of finely chopped dill
Ginger and Orange Blossom Honey Labneh
- 500g yoghurt
- 1/2 teaspoon salt
- 2 teaspoons grated ginger
- 1 heaping tablespoon of orange blossom honey (or plain honey and a teaspoon of orange blossom)
- Mix all ingredients in a bowl. Then follow same directions to make classic labneh.
Cheese Recipe
Fried Mozzarella Serves :3
Ingredients :350 g / 12 oz mozzarella cheese, in the piece flour seasoned with salt and ground black pepper 2 eggs plain dry breadcrums frying oil herbs to garnish
Steps :1. Fist cut the cheese into slices. Pat off the moisture with kitchen paper. Then prepare two bowls, one for flour, beat the egg in the other one. 2. Heat the oil to a temperature of 185 / 360 F or untill the small piece of bread sizzles as soon as it is dropped in. Then put the cheese into the bowl with flour, then into the one with egg. After that coat the cheese in the breadcrumbs. 3. Fry the coated mozarella until it becomes golden brown. Then just drain on kitchen paper and serve hot with any vegetables.
Comments :Do not let the coated cheese stand for too long before frying, or the breadcrumbs will separate from the cheese during frying. Very tasty with cooked tomato and basil sauce.
Melted Cheese Serves : 5
Ingredients :Mozzarela Cheese and Corn Chips
Steps :Using a large dish, melt enough mozzarela cheese for your guests. Then take the nacho chips and dip it in. Add some seasoning to spice it up!
Potato Gratin with Munster Cheese Serves : 4
Ingredients :500 g potatoes 150 g / 5 oz Munster cheese, rind removed and diced 60 ml / 4 tbsp double cream 150 ml milk 30 ml / 2 tbsp snipped fresh chives or chopped fresh parsley freshly grated nutmeg salt and ground pepper
Steps :1. First peel the potatoes and slice them. Then take a pot, fill it with water and boil them. Then pour water out and put them on the plate. 2. Preheat the grill. 3. Prepare the saucepan and put the cheese, cream and milk inside. Then heat it gently, but do not boil it! After that remove it from the heat and add parsley, nutmeg and salt. Pour the mixture over the potatoes and then put it in the grill for a while. 4. Now it is ready to be served.
Comments :You can use any semi-soft or washed rinded French cheese, for example Reblochon, Langes or Epoisses.
Caesar Salad Serves : 4
Ingredients :50 g / 2 oz piece of Parmesan cheese shaved or grated 2 large garlic cloves 45 ml extra virgin olive oil 1 small cos or Little Gem lettuces FOR THE DRESSING: 10 ml / 2 tbsp French mustard 1 egg 5 ml / 1 tbsp Worcestershire sauce 30 ml lemon juice 30 ml extra virgin olive oil salt and black pepper
Steps :1. Prepare all ingredients needed for salad. 2. Preheat the oven to 190 C. Then take the half of garlic and rub inside of a salad bowl. Mix the remaining garlic with oil and heat it for 5 minutes. After that, remove the garlic. 3. Cut the crost from the bread and cut it into small pieces and toos them in the oil. Then put the bread on the baking sheet and bake for about 10 minutes. 4. Then put the lettuce leaves in a shallow salad bowl. 5. Now you can prepare the dressing. First boil the egg for one minute. Then crack it into a bowl. Beat the mustard, and add Worcestershire sauce, lemon juice, olive oil, salt and pepper. After that sprinkle the parmesan over the salad and drizzle the dressing over.
Comments :You can also add two boiled eggs into the dressing and just cut them to small pieces.
Lentil, Tomato and Cheese Salad Serves : 6
Ingredients :250 g / 9 oz Feta, goat's milk cheese or Caerphilly 200 g / 7 oz lentils soaked for about three hours in cold water 1 red onion 1 bay leaf 60 ml / 4 tbsp extra virgin olive oil 45 ml / 3 tbsp parsley 30 ml / 2 tbsp chopped fresh oregano or marjoram 250 g / 9 oz cherry tomatoes salt and black pepper leaves of chicory or frisee and fresh herbs, to garnish 30 - 45 ml lightly toasted pine nuts, to serve
Steps :1. Take the large saucepan and put the lentils inside. Pour a lot of water, add onion and bay leaf and cook for 10 minutes. Then lower the heat and cook for another 20 minutes or more, if necessary. 2. Next, drain the lentils, season them for better taste and put them on salad bowl. After toss them with olive oil. Now let it to cool for a while and then add fresh parsley, oregano or marjoram and cherry tomatoes. 3. Put the cheese inside. Line a serving dish with chicory or frisee leaves and garnish with salad. 4. Finally, add pine nuts and herbs. Serve immediately afterwards.
Comments :The best thing is to use Puy lentils, but soake them in water before you start to cook.
Roquefort and Walnut Pasta Salad Serves : 4
Ingredients :225 g / 8 oz Roquefort, crumbled 225 g / 8 oz dried paste shapes salad leaves of rocket, lettuce, frisee and spinach 30 ml walnut oil 60 ml sunflower oil 30 ml red wine vinegar 115 g / 4 oz walnut halves salt and ground black pepper
Steps :1. Take a big bowl, fill it with water and boil the paste according to the instructions od the packet. After that drain it properly. 2. Then prepare a big bowl and put the leaves of salad on its bottom. 3. Prepare a dressing in a small bowl, mixing oils, red wine vinegar, salt and pepper . 4. Next put the pasta in the middle of salad bowl and sprinkle it with the cheese. Add walnut halves and serve.
Comments :Before you add the walnuts to the salad, toast them under the grill.
Pizza with Four Cheeses Serves : 4
Ingredients :175 g / 6 oz strong white flour 1.5 ml salt 5 ml / 1 tbsp easy-blend dried yeast 15 ml olive oil 150 ml hand-hot water TOPPING 75 g Gorgonzola or other blue cheese, sliced thinly 75 g Mozzarella cheese, diced 75 g chevre, sliced thinly 75 g Cheddar cheese, coarsely grated 4 fresh sage leaves 45 ml / 3 tbsp olive oil
Steps :1. Take a big bowl and put salt and flour into a large mixing bowland add the yeast. Make a dough, adding olive oil and a lot of hand-hot water. (to make it soft) 2. Leaf the dough aside for about ten minutes. Meanwhile, take a clear bowl, cover it with clean film and leave in a warm place for one hour. 3. Preheat the oven to 220 C. Turn the dough on to a lightly floured surface and knead again for 2 - 3 minutes. Roll out to a 30 cm round and place on a baking sheet. 4. Score the pizza into quarters. On one quarter put blue cheese on the other one Mozzarella cheese. Fill the rest with Cheddar and goat's cheese. 5. Drizzle the top of the pizza with olive oil and bake for 20 minutes in the oven.
brie and turkey sandwich Serves 1 :
Ingredients :2 slices of dark pumpernickel bread. 1 to 2 slices of smoked turkey breast 1 slice brie lettuce,tomato,mayonnaise,and salt and pepper optional.
Steps :combine all the ingredients together as you would a normal sandwich and enjoy.
Cheeseburgers Serves : 4
Ingredients :50 g / 2 oz bulgur wheat 225 g / 8 oz minced beef 15 ml / 1 tbsp Parmesan cheese, freshly grated 1 egg 4 berger buns 4 cheese slices 1 onion, chopped 15 ml / 1 tbsp tomato pure 15 ml / 1 tbsp chopped fresh parsley lettuce leaves salt and pepper (tomato relish)
Steps :1. Take a bowl, fill it with water. Put the bulgur wheat inside and boil it for about 10 minutes. Then drain off any liquid that has not been absorbed. 2. Prepare another bowl. Put the minced beef inside and add the onion, parsley, tomato puree and Parmesan. After that add the bulgur wheat and mix everything properly. 3. Next put the beaten egg to the mixture. 4. Divide it into four portions. Preheat the grill and heat them for 8 - 10 minutes. 5. Cut the burger buns half and toast them under the grill for one minute. Then add a burger on the top with a slice of the cheese. Now just put the lettuce leaves inside the burger and serve with chips and tomato relish.
